Ingredients - 2 people

  • 3 carrots (500g)
  • 1 onion
  • 1 garlic clove
  • 6 tablespoons olive oil
  • 90 g red lentils
  • 1/2 teaspoon salt
  • 2 heaped tablespoons vegan-carrot:PROTEIN
  • 3 tablespoons lemon juice

Here's how it's done:

  1. Preheat the oven to 200° C.
  2. Peel the onion and garlic and cut the onion into rings.
  3. Mix the carrots and onion with 2 tablespoons of olive oil.
  4. Place the mixture on a baking tray lined with baking paper and add the peeled garlic clove.
  5. Now roast the vegetables in the oven for about 20 minutes (Tip: turn the vegetables occasionally so that they are roasted evenly.)
  6. In the meantime, steam the red lentils according to the instructions on the packet until soft and then set aside.
  7. When the carrots are soft, remove them from the oven and let them cool slightly.
  8. Then finely puree all ingredients with the vegan-carrot:PROTEIN, the remaining olive oil and lemon juice.
  9. Season with a little lemon juice and salt to taste.
  10. The dip tastes delicious when still slightly warm with wholemeal bread or vegetable sticks.
